Spinach Aloo Thoran

Simple Spinach and Potato thoran tasted at my friends house was in a real taste.So decided to try it and now this is the recipe which tastes too good. This dish combines it with a lightly spiced onion and coconut.The coconut gives the thoran a nice sweet flavor.Yoy can even use frozen spinach for this recipe ,it will fry easily and quickly if you defrost it before cooking.


Ingredients:
  • Spinach : 1 big bunch(chopped)
  • Potato : 1 big(boiled,peeled,cubed)
  • Onion : 1 medium(chopped)
  • Salt : as required
  • Green chillies : 2-3(chopped)
  • Garlic pods : 2 (crushed)
  • Coriander powder : 1/2 tblspn
  • Dessicated Coconut : 2 tblspn
For Tampering:
  •  Mustard : 1/2 tblspn
  • Cumin seeds : 1.2 tblspn
  • Urad dal : 1 tblspn
  • Dry red chilli : 1
  • Oil : 2 tblspn 



















Procedure:
  1. Heat oil in a pan and add  the mustard , cumin.As they begin to pop add a pinch asefoetida , urad dal , red chilli , garlic and fry till the color changes to golden brown.
  2. Then add the chopped onion, green chillies.Cook stirring for 5 mins till the onion softens.
  3. Add the finely chopped spinach ,salt ,a pinch turmeric and stir fry for another 5 mins till the spinach turns soften.
  4. Add the boiled  potatoes , coriander powder , coconut .Mix well and cook for another 3-5 mins.
  5. Serve hot with rice or roti.

Strawberry Mint Shooter


I have always been fascinated by the range of fruit juices available in India.On a hot summer day we tend to drink lots of coconut water, fruit juices made from various kinds of fruits.However juices can be served plain or by adding spicy flavorings such as mint ,ginger etc., Strawberries are one of my favorite fruit. These were not available in abundance in my childhood days, but in the recent days the scenario changed and they are found in almost every super market. This is kind of a cocktail, where in you feel the punch of mint and chunks of strawberry.


















Ingredients:
  • Strawberries : 4
  • Lemon : 1
  • Mint : 1 sprig
  • Sugar syrup : 2 tblspn
  • Sparkling water (club soda)
  • Ice
Procedure:
  1. Cut the stems of the straw berries and split into halves.
  2. Take a glass and throw 4 halves in each glass , 1 tblspn sugar syrup , 1 tblspn lemon juice ,3-4 leaves of mint,
  3. Crush all the stuff using a spoon and fill it with sparkling soda and a couple of ice cubes.
  4. Serve with a fresh strawberry in the hot summer.
Making of sugar syrup:
Take an equal quantity of water and sugar in a sauce pan ,bring it to boil and stir  until the sugar dissolves.
